Green Beans with Feta and Pecans
Growing your own food can be incredibly rewarding and have a significant impact on your food budget.
Ingredients
- 1 ½ lbs fresh or frozen whole green beans
- 2/3 C olive oil
- 1 tsp dried dill weed
- 1/3 C white wine vinegar
- 1 ½ tsps minced garlic
- ¼ tsp each salt and pepper
- 1 C toasted chopped pecans
- ½ C diced red onion
- 1 C crumbled feta cheese
Directions
- Cook beans until crisp tender about 4 minutes for fresh.
- Make dressing with the next five ingredients, combining in a jar and shaking well.
- On a large platter, layer beans, diced red onion, pecans and crumbled feta cheese. Pour dressing over all evenly.
Preparation Tips
Can be served warm or at room temperature.
