Green Beans with Feta and Pecans

Growing your own food can be incredibly rewarding and have a significant impact on your food budget.

Ingredients

  • 1 ½ lbs fresh or frozen whole green beans
  • 2/3 C olive oil
  • 1 tsp dried dill weed
  • 1/3 C white wine vinegar
  • 1 ½ tsps minced garlic
  • ¼ tsp each salt and pepper
  • 1 C toasted chopped pecans
  • ½ C diced red onion
  • 1 C crumbled feta cheese

Directions

  1. Cook beans until crisp tender about 4 minutes for fresh.
  2. Make dressing with the next five ingredients, combining in a jar and shaking well.
  3. On a large platter, layer beans, diced red onion, pecans and crumbled feta cheese. Pour dressing over all evenly.

Preparation Tips

Can be served warm or at room temperature.
